Today I was fortunate enough to find Maggie at the Parkesdale Farm Market Food Truck event. Maggie provides a Mediterranean fusion cuisine to her customers. Accompanied by her well mannered and gregarious son.
Cerdo De Fresas
Spanish style pulled pork and Pita with creamy cilantro slaw strawberry salsa and fried onions.
Maggie being the creative genius that she is contacted Parkesdale and asked for their strawberries to make this perfect dish. What a great concept. Fresh strawberries from Parkesdale mixed with Magggie’s pulled pork. It was the perfect combination.
Bacon Baklava. Maggie has out done herself with this one. They even have bacon spread on the phyllo. Bacon galore on this dish. I took the first bite and was amazed how the flavors come alive in your mouth.
